Replace the breadcrumbs with coconut flakes and you will never think to eat your deep fried beef, chicken or pork meat in a different way. We need to marinade half a pound of chicken meat into a mix of Greek yogurt, about two cups, juice of a lemon and one tablespoon of salt. It’s better if we marinade it overnight for more tenderness, but it’s ok if we marinade it at least for two hours. All we have to do is to roll thin meat chunks into coconut flakes, deep them into a mixed egg and then again into the coconut flakes. This is also a recipe that we could prepare it into the oven, if we do not want some extra calories from the deep fried technique. The coconut flakes bring an extra flavour but also some extra… crispiness. And we can also deep fry our veggies with coconut crust!
