I must confess I’m very proud of this easy and delicious recipe and I cook it anytime I need something special on my table. We need half a pound of chicken liver and three cups of Tzatziki, but if you can’t find this sauce, you could do it by yourself, with three coups of Greek yogurt, three pickled cucumbers finely chopped, half a teaspoon of garlic powder, one tablespoon of olive oil, one teaspoon of dill and salt. Put the chicken liver into a tray, sprinkle some salt and pepper and pour around two tbsp of olive oil, cover with aluminum foil and put it into the oven for 30 minutes. When it’s ready, cut the liver into halves and mix it with the Tzatziki sauce. Sprinkle some fresh dill and parsley on top and decorate it with some red bell pepers and it’s ready to be served. The best thing of this recipe is you could eat it warm or cold and it is getting better everyday, so you could prepare a bigger quantity and keep it into the fridge, refreshing it by adding two tbsp of yogurt and dill, if you are looking for more sauce. Maybe chicken liver is not the favorite meat for most of us but we should be aware that it brings a good amount of iron, so it’s a good meal for kids and also for old people.
